Tortilla Roll-ups Tree
These are delicious and very cute to serve as an appetizer!
Ingredients
1 package of 12 spinach tortillas
8 oz. softened cream cheese
1 cup sour cream
1/2 of a 4 oz. can of green chiles (chopped)
3 Tb. green onion (chopped)
3 Tb. black olives (diced)
2 Tb. red bell pepper (finely chopped)
8 oz. sharp white cheddar cheese (grated)
Salsa (optional)
This will make about 80 roll-ups.
In a medium bowl combine cream cheese, sour cream, chiles, green onion, black olives, red
bell pepper, and the white Cheddar cheese. Mix well with a spatula. Spread mixture onto spinach tortillas. Make sure to cover entire tortilla.
Then, roll up.
Cover roll-ups tightly with saran wrap and chill for at least 2 hours or overnight. This makes them easier to cut and lets flavors meld together. Right before you serve them, cut each roll into 1/2-inch slices. On a large serving tray place rolls in the shape of a triangle to resemble a Christmas tree. Start with one roll-up at the top, then 2 below that one and so on. Can be served with salsa if you like.
Yum!
